DIY Calming Adaptogen Popsicles with Lavender and Honey

Popsicles made with our calming adaptogen blend: Simmer Down Tonic, lavender, and honey. Dairy-free with coconut milk and naturally sweetened!

Everyone's familiar with the relaxing effects a mug of warm milk and honey can have in helping one wind down at the end of a long day, especially when infused with soothing herbs like lavender, chamomile, or even ashwagandha.

These popsicles are our summertime version of that—a creamy, lavender-infused coconut milk sweetened with honey and spiced with a touch of cardamom and vanilla. Soothing and refreshing, they make the perfect ending to a sweltering day, particularly as they also contain our Simmer Down Tonic, a mixture of relaxing herbs that support the nervous system and help the body better adapt to stress.

Ingredients

To make the popsicles, you will need:

  • A popsicle mold and popsicle sticks
  • 1 can full-fat coconut milk
  • 1/4 cup water
  • 2 tbsp fresh or dried lavender flowers
  • 2-3 tablespoons honey (or to taste)
  • 1/8 tsp cardamom
  • 1/8 tsp vanilla seed powder (or 1/2 tsp extract)
  • 2 tbsp Urban Moonshine Simmer Down Tonic

Directions

  1. Place the coconut milk and water into a small saucepan over medium heat. Once the mixture begins to simmer, turn off the heat.
  2. Add the lavender, honey, cardamom, and vanilla to the saucepan. Cover and allow to steep for 15-20 minutes.
  3. After infusing, pour the mixture through a strainer to remove the lavender. Add the Simmer Down Tonic and mix well.
  4. Allow the mixture to cool, then fill your popsicle molds. The mold we used makes a total of 6 popsicles, but yours may make more or less depending on the size.
  5. Place in the freezer for one hour, then add the sticks and continue freezing until solid.
